Due to the good start with Zürischum and our initial promise that we will still be responsible for one or two fine droplets, the creation of our third bubbly comes just in time. Because our new Zürischum Blanc de Noirs with its fresh character is an ideal souvenir and a noble companion for every culinary delight. In addition, there is its special pressing, in which we produce white sparkling wine from dark blue grapes, which goes perfectly with our blue-white city.
The Pinot Noir grape:
With a good 600 hectares of vineyards, the canton of Zurich is the largest wine-growing region in German-speaking Switzerland. With over 300 hectares, the Pinot Noir is the most widely grown grape variety in Zurich. Pinot Noir is a very demanding and difficult to grow variety. The small, thin-skinned berries ripen late and are very sensitive to frost. The demanding grape variety requires extremely careful vinification and is only convincing with low yields. In general, a Pinot Noir tastes fruity and full-bodied. Many have aromas of berries, cherries or figs with nuances of almond or wood aromas.
Blanc de Noirs - dark grape, white pleasure. For our youngest Zürischum, the grapes are pressed very quickly after the harvest so that the coloring matter that sits in the grape skin cannot penetrate into the white pulp from which the juice runs. And since red wine grapes usually have less acidity than the white ones, Blanc de Noirs are a very good alternative for more sensitive connoisseurs.
With its low residual sugar content, our Blanc de Noirs is one of the 'brut' sparkling wines.
Its sugar content is at the low end of Brut.
